A couple nights ago I made grilled flatbreads with lavash bread. I am a big fan of crunchy crust, and have been on the hunt for really thin, crusty pizza. I finally realized I need to substitute the pizza dough for more of a cracker.... enter lavash bread. This made for the perfect crunchy flatbread. I used pesto, grilled vegetables, and parmesan (because that's what I had on hand), but the combinations are endless. Make sure to grill (or bake) the bread a little before adding the pesto and toppings to ensure that it gets crispy. I grilled all the vegetables first, baked the bread for about 10 minutes, added all the toppings, and then cooked it for about 5 more minutes. Turned out so delicious!
